Olympia Shucker (PN: OLOYSPH)
The Olympia Oyster Knife with 2-1/2 inch (6.4 cm) x 5/8 inch (1.6 cm) 16 gauge (2.4 mm) high carbon stainless steel blade with our tough "Murphy Green" polypropylene plastic handle.
This shucker was designed in collaboration with Marco Pinchot of Taylor Shellfish Farms to specifically to open Kumamoto & Shigoku oysters. The blade has a short (1") four sided eased edge grind that gently tapers to the flat unground blade. Superior to other knives when opening these challenging small "pearls", the Olympia will handle the larger East & West Cost varieties beautifully too.

“The Narragansett", "The Wellfleet” & “The Damariscotta” (sold individually) oyster knives are as fast and efficient to use as they are beautiful. These hand crafted knives are suitable for professional and occasional shuckers alike.
●The blade - 2 ⅝” perfectly hardened, ground and polished high carbon stainless steel, pointy and sharp yet tough, requires little force to ease between the shells at the hinge. A simple twist of the wrist, a quick cut of the abductor muscle and the oyster is yours.
●The handle - Bubinga, brass riveted to a full tang, vacuum infused to increase stability and water resistance. The wood and brass are polished manually - enhancing the wood’s smoothness and beauty and the brightness and mirror of the brass. Long and thick, it is sized, shaped and contoured to compliment the blade and nest comfortably in your hand.
These knives are versatile and work well on most small to medium East & West Coast oysters. You will appreciate the quality and workmanship of these “pearls” every time you open an oyster.
